can (6 oz)tomato paste

pita, small (4" dia)pita bread, whole-wheat
Steps

1Preheat a large nonstick skillet on high heat.
2Coat the skillet lightly with fat-free cooking spray and saute the onions, peppers, and garlic together for about 2 minutes. Add the chicken breasts
3Once everything is browned, spoon in the tomato paste and add the plum tomatoes. Crush the plum tomatoes with the back side of a fork until most of their juice is released. Cook for approximately 10 minutes. To check the chicken for doneness, make a small cut in the middle of the breast. If no pink remains, the chicken is done.
4When complete, remove from pan and arrange equal portions into the pitas. Serve warm.
