Recipe Description This is truly the best carrot cake I've ever had, vegan or not. I would love to give credit where it's due, but I got the recipe from a lovely lady who brought the cake for a potluck lunch. The occasion was a spay/neuter clinic in Charlottesville where I was volunteering.

Best Vegan Carrot Cake

cupcanola oil

cup, crushed, sliced, or chunkspineapple, canned, crushed, undrained

cup, shreddedcoconut, dried, shredded

cup, choppedwalnuts

cupdairy free cream cheese Tofutti, etc.)

cupVegan Margarine

cups unsiftedsugar, powdered

teaspoonClear vanilla extract
Steps
Sequence Step
1Preheat oven to 350 degrees F.
2Do not use a hand mixer for this recipe, use a ladle or spoon.
3Mix all the dry ingredients together.
4Then mix in the carrots
5Add the orange juice
6Fold in the nuts, pineapple, and coconut.
7Grease a 9"x12" pan with cooking spray or oil.
8Put the batter into the cake pan.
9Bake for 45 minutes or until knife/toothpick comes out clean when inserted in the center.
10Let cool completely.
11Beat cream cheese and margarine together.
12Beat in powdered sugar and vanilla together with hand mixer.
13Frost cooled cake.
14Enjoy!
