Recipe Description This is another of those recipes origin unknown. I found it in my recipe box, and have no idea where I got it. It does sound quite delicious, so here it is for you.....

Ingredients

cups (1/2" cubes)Tofu, soft, 16 oz

cupolive oil, extra virgin
1/2
teaspoonsalt

teaspoonsvanilla extract

cupsTruvia, Stevia (or dry sugar sub. of choice)

cupsShredded coconut

crust, single 9"graham cracker pie crust
Steps
Sequence Step
1Preheat oven to 350° F.
2In a blender or food processor, blend together the tofu, olive oil, vanilla, salt, and sweetener.
3Pour into a large bowl and fold in 2 cups of the shredded coconut.
4Pour into a graham cracker pie crust and bake for 15 minutes.
5Sprinkle the remaining ½ cup shredded coconut on top and bake for another 10 minutes, until filling looks set and center is firm.
