Recipe Description The wonderful people at “The Complete Guide to Vegan Food Substitutions” have given us another recipe to enjoy. This is accompanied by the “Perfect Cream Cheese Frosting”. This traditional favorite usually calls for artificial food color.

cupsugar - Organic cane juice, evaporated

teaspoonvanilla extract

cupmilk, soy
1/4
cupfreshly squeezed lemon juice
Steps
Sequence Step
1Mix the 1/4 cup lemon juice with the 1/2 cup soy milk. Let this mixture stand a few minutes to allow the milk to curdle. Substitution for buttermilk.
2Lightly coat two 8-inch (20 cm) round cake pans with cooking spray.
3In a small bowl, combine cocoa and beet juice.
4In another bowl, combine flour, cornstarch, baking powder, and salt.
5Preheat oven to 350°f (180°C, or gas mark 4).
6Beat butter with an electric mixer for 30 seconds.
7Add evaporated cane juice and vanilla; beat until well combined.
8Beat in cocoa mixture. Alternately add flour mixture and soy milk/lemon juice mixture, beating on low to medium speed after each addition until just combined.
9Place batter into prepared pans.
11Remove pans and cool for 10 minutes.
12Remove cake from pans, and cool on wire rack.
13When cakes have cooled completely, apply frosting. (Perfect Cream Cheese Frosting is perfect for this cake.)
