Ginger Apple Coffee Cake

1/2	cup	homemade applesauce
1	Usda default (100 gm - 4 oz)	1/4 cup peanut oil
3/4	cup	whole spelt flour
1/2	cup	Homemade applesauce
1	Usda default (100 gm - 4 oz)	1/4 c peaunt oil
3/4	cup	whole spelt flour

Simple Ginger Syrup

3/4	cup	raw sugar
3/4	cup	spiced apple cider
3/4	cup slices (1" dia)	fresh ginger, peeled & sliced

1	Combine all ingredients in a saucepan; bring to a boil and simmer for 20 minutes or until syrup has reduced to 1 cup.
2	Let cool; discard ginger.

Simple Streusel

1	teaspoon	cinnamon, ground
