| 1 | Sprinkle gelatin over water and let stand 5 minutes.
Meanwhile in a saucepan, heat coconut milk and honey. Mix and heat until just about ready to boil. Add gelatin and stir until dissolved. Remove from heat and allow to cool for 10 minutes. Whisk in protein powder and greek yogurt and vanilla.
Pour into 8 serving dishes and let set in fridge. Top with mint leaves and raspberries. |
