large (2-1/4 per lb, approx 3-3/4" long, 3" dia)green pepper, chopped

oniononions, medium size, chopped

tablespoonsSpices, ground cumin

tablespoonschili powder

tablespoonoregano, dried

wholeavocado

sprays (about 1 second)Pam cooking spray
Steps
Sequence Step
1Combine beef and onion, brown in pot sprayed with Pam.
2Add Beans (use 3 cans of your favorite... for black beans, rinse them first). ALso add the canned diced tomatoes (I buy the tomatoes with jalapeno peppers. The fire roasted tomatoes are good too.
3Add the spices (cumin, oregano, and chili powder to taste) Note that I often add the cumin and chili powder to the beef and onions in step 1 to prevent clumping )
4Add the chopped green pepper
5Simmer for 45 minutes. (Add 1 T of unsweetened cocoa during the last 15 min of cooking.. note that it adds a smoky flavor and a great deep color.. you won''t taste the chocolate)
6Turn the burner off and mix in 1 chopped avocado. Make about 10 cups.
7NOTE If you find that it''s a bit thick, add about 2 cups of water while it''s simmering...(I usually rinse the tomato can with water and pour it in..
