cupstomato sauce - 8 oz can

tablespoonsgrated parmesan

teaspoonsitalian seasoning

teaspoonsparsley flakes

cup, choppedOnion, chopped

teaspoongarlic minced

teaspooncoconut oil

cups, dicedcelery, finely diced
Steps
Sequence Step
1slice zucchini into long spaghetti like strands with a mandolin or vegetable slicer.
2lightly salt and allow to stand in a colander to drain off excess water
3Divide chicken breast into two portions and pound to a uniform thickness.
4mix Parmesan cheese, parsley, and Italian Seasoning.
5Dredge chicken in Parm mix
6Bake at 400F until done - (15 minutes?)
7In skillet, saute onion, carrot, and celery in oil until fragrant and onion begins to turn translucent. Add garlic.
8Add tomato sauce and any needed seasonings
9Bring to a simmer and add rinsed zucchini "noodles" and stir until noodles just cook - barely a minute
10Divide noodles and sauce onto serving plates. Top with hot chicken breasts. Serve
