Steps
Sequence Step
1Slice washed zucchini in half lengthwise into "boats" and use a spoon to scrape/scoop out the seed cavity/insides to make a hollow. Reserve zucchini "guts".
2Brown beef, onion, and zucchini "guts" in pan until all pink is gone from meat.
3Drain ant grease and add 1/3 cup water and taco seasoning. Stir to distribute evenly. When almost dry, stir in tomatoes.
4In a large bowl mix beef and cheese, reserving 1/4 cup of cheese for garnish.
5Spoon into "boats and place on silpat or oiled cookie sheet, beef side up.
6Bake 400* for 30 minutes. If zucchini is not done, return to oven and check after 10 more minutes.
7Remove, sprinkle mozzarella cheese and return to oven. Turn heat off. Cheese will melt in 3-5 minutes. Top with green onions.
8Serve with Salsa and sour cream
