Ingredients

cup, slicedzucchini, thinly sliced into lo mein sized noodles

tablespoonMargarine, regular, stick

teaspoonred peppers, crushed

tablespoonssoy sauce

tablespoonshot pepper sauce (Sriracha, etc.)

largegreen onions, chopped

tablespooncilantro, fresh, chopped
Steps
Sequence Step
1Begin to boil water for the zucchini noodles. Once the water reaches a full boil, add the zucchini and cook until soft (approx. 5-7 minutes).
2While waiting for the water to boil, prepare the sauce. In a small bowl, stir together the brown sugar, soy sauce and Sriracha.
3In a large skillet, melt 1 tablespoon of margarine over medium-low heat. Add the red pepper to the margarine as it melts. Whisk the eggs in a bowl and then add to the melted butter. Stir gently and cook through. Once the eggs are done cooking, turn off the heat.
4When the zucchini noodles are tender, drain the water and then add them to the skillet with the cooked egg. Also add the prepared sauce. Turn the heat on to low to evaporate excess moisture and stir until everything is coated well with the sauce. Sprinkle the chopped green onions and cilantro leaves on top and serve!
