Amt. Measure Ingredient
2
cupswhole wheat flour

1/2
cupsflour, bread, enriched
1/2
cupwheat bran
1/4
cupwheat germ
1
tablespoonsalt, table
3/4
cupwhite sugar (from sourdough starter)
3
tablespoonspotatoes instant (from sourdough starter)
1/2
cupvegetable oil
1
1/2
cups (8 fl oz)water, warm (110 degrees)
1/4
cupwhite sugar
1
cup (8 fl oz)water (from sourdough starter - contains the sugar and instant potatoes)
Steps
Sequence Step
1Mix all ingredients in large bowl. Cover lightly (dish towel) and let stand for 8-12 hours (in oven, with light on if possible)
2Punch down and knead the dough a little. Divide it into 3 parts. Knead each part on a foured board 8-10 times. Put into greased or non-stick loaf pans. Cover lightly and let stand for 8-12 hours in oven with light.
3Bake at 350 for about 20 min or until golden brown. Can put sheet of tin foil on top so doesn''t burn for first 15 or so minutes.
4Note: There was no ingredient choice for the sourdough starter. I calculated the likely amounts of the ingredients in the starter to use in the recipe. These ingredients are sugar, instant potatoes, and water. The recipe actually calls for 1 cup of sourdough starter.
