1 | Preheat oven to 350F |
2 | Coat a 10" tube pan with cooking spray and dust with bread crumbs. |
3 | Combine flour and baking soda in a bowl and stir well. |
4 | Beat butter in a large bowl with a mixer at medium speed until light and fluffy. Gradually add the granulated sugar and lemon juice (save 2 tablespoons), beating until well-mixed. Add the eggs, one at a time, beating after each addition. Add the rind and beat for 30 seconds. |
5 | Add the flour mixture to sugar mixture alternately with sour cream, beating at low speed, beginning and ending with the flour mixture. |
6 | Spoon into the prepared pan. Bake at 350F for 1 hour and 10 minutes or until wooden prick comes out clean. |
7 | Cool cake in pan for 10 minutes and then on a wire rack. |
8 | Combine 2 tablespoons of lemon juice and powdered sugar. Drizzle over top of cake. |
