2 3/4	cup, quartered or chopped	apple
2/3	cup	white sugar
1	cup	all-purpose flour
1	tablespoon	unsweetened cocoa powder
1	teaspoon	cinnamon
1/2	teaspoon	baking powder
1/2	teaspoon	baking soda
1/4	teaspoon	salt
1/4	cup (8 fl oz)	coffee
1	large	eggs
2	tablespoons	vegetable oil
1	teaspoon	vanilla extract
3	tablespoons, unsifted	powdered (icing) sugar

1	Preheat oven to 350F. Spray an 8 or 9" square baking pan with vegetable oil spray.
2	In a medium bowl, stir together apples and sugar; let stand for 10 minutes.
3	In a large bowl, stir together flour, optional cocoa powder, cinnamon, baking powder, baking soda, and salt.
4	In a medium bowl, stir together remaining ingredients except icing sugar.
5	Stir apple mixture into flour mixture.
6	Add coff mixture, stirring until blended.
7	Pour batter into pan. Bake for 20 to 25 minutes, or until a toothpick inserted in center comes out clean.
8	Let cool on a rack for about 30 minutes. To serve, remove pan and dust with icing or confectioners'' sugar and cut into squares.
