1 | Remove seeds (if desired for heat allow a couple) and ribs of jalapenos. Chop onion and tomato and slice the avocado. |
2 | Heat the olive oil in a skillet over low to medium heat and add the onion and jalapeno and allow them to cook until they are tender. |
3 | Stir in the tomato and minced garlic to the jalapeno mixture and allow to heat for about 30 seconds. |
4 | Pour the eggs into the skillet with the vegetable mixtures and scramble the eggs in the mixture until no longer runny. |
5 | Turn off the heat and place the cheese on the egg mixture. |
6 | Heat tortillas in the microwave or in another pan. |
7 | Place the egg mixture in the tortillas and top with sliced avocado. |
