| 1 | Mash bananas with the salt and vanilla | 2 | Mix banana mixture well with all other ingredients but the oats. NOTE: Do NOT add the brown sugar - including it in the recipe is my attempt to make up for the fact that I could not find sweetened dates or cherries to include in the recipe. 108 grams of sugar added to each of the fruits seems to translate to .22 teaspoons of sugar each. | 3 | Add the oats and mix well. | 4 | Firmly press mixture to tablespoon to form cookie and place on cookie sheet - they can be placed close to each other because they do not expand. I use a glass cookie sheet. | 5 | Bake at 350 for 25 minutes. | 6 | Let cool completely, the use a metal spatula to gently remove from pan. |
