| 1 | In a medium non skillet, heat oil, over medium high heat. | 2 | In a medium size bowl add eggs,spinach, salt and pepperand mix together.
Add the mixture on the skillet cook over low medium heat for about five minutes, or until desired firmness, set aside. | 3 | Slice the buns in half, toast on the same skillet for a minute. | 4 | Place the egg on the toasted bun. | 5 | Spread mustard on the remaining toasted bun and cover eggs to make a sandwich cut in half and serve with milk or juice or fruit. |
