The 6 reasons I adore these 6-ingredient, 6-step yummy Spring treats? 1.) The main character is a fruit; mommies will approve. 2.) Heart-healthy dark chocolate is the sidekick. 3.) The delicate sponge cake, layered with sweet fruit and silky caramel crunch is like texture city central. 4.) Contrary to freshly baked cookies, you can enjoy them at your leisure by sticking them in the freezer until you are ready to serve. 5.) On that note NO BAKING required! 6.) Bite-sized means seconds, thirds, and fourths is not only allowed, but seriously recommended!

A lovely summer cake that requires no cooking. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

Crust: Blend all ingredients in food processor. You don’t want any large nut or date chunks. Pour into 8 inch cake pan and press down evenly. Filling: The cashews must be soaked overnight. Blend all ingredients in food processor or blender (I should have used our blender for a smoother consistency). Pour on top of crust and spread evenly. Place in the fridge for several hours or the freezer (freezes very well) and let thaw 20 minutes before eating.
