Divide puffcorn

High Protein & Energy Snack: I'm gravitating towards the Paleo Diet, so I created this recipe out of a desire to eliminate those expensive & so-called "nutritious" protein bars. I don't want all of the processed carbs that are hidden in them because quite honestly, they aren't that healthy. These are really tasty, & my whole family loves them. I recommend making them fairly small & bite-size, as they can crumble a little if you're biting into them. Freezing them keeps the messiness down, but they won't spoil if left at room-temperature. I eat 4-5 with a big glass of water, & I'm FULL!

Intended to be a base for snack-prone insulin-resistant folks. It's a high fiber protein cookie base. Not very good right now, but I plan to tweak it if the fiber content comes out high enough after running it through your recipe builder machine. Maybe add some crunch, nuts, and give it a better name. Maybe add more sweet flavor ingredients, like dates or something. Until then, just drench in Sugar-Free Maple Syrup if you want them sweet. While testing, I'm just making small quantities in a toaster oven. The final recipe probably will be doubled and done in a real oven. I need something like this, so I'm motivated. Preheat an oven to 200 degrees F (120 degrees C). Line a baking sheet with parchment paper.
Beat the egg in a bowl until frothy; whisk the water and vanilla into the egg. Stir the sugar, cinnamon, and salt into the egg mixture. Add the pecans; stir to coat completely. Spread the pecans onto the prepared baking sheet.
Roast the pecans in the preheated oven, stirring about every 15 minutes, until the coating forms a glaze, about 45 - 60 minutes. Allow to cool on the baking sheet at least 10 minutes before serving.

1. Line an 8-inch (20 cm) square pan across the bottom and up the sides with two sheets of aluminum foil, making a big criss-cross with the sides overhanging.
2. Preheat the oven to 325F (160C) and position the rack in the center of the oven.
3. In a large bowl, toss together the flour, baking powder, baking soda, and salt. Add the brown sugar, walnuts, dates, and apricots. Use your fingers to mix the fruit, separate any pieces sticking together.
4. Beat the egg and vanilla in a small bowl, then mix it with the fruit and nut mixture until everything's coated with the batter. Spread the mixture in the baking pan and press gently to even it out.
5. Bake for 35-40 minutes until the top of the bars are golden brown and has pulled away just-slightly from the sides of the pan. Cool the bars in the pan, then lift out.
6. To cut the cooled bars, use a heavy sharp knife, such as a bread knife, for best results in getting clean slices.

Preheat oven to 325 degrees. Except for dried fruit (i.e. craisins, bananas, raisins, or cherries), mix all ingredients in large bowl. Grease large baking sheet (with sides) with a small amount of canola oil. Spread granola mixture evenly on baking sheet. Cook for approximately 30 minutes until granola starts to turn a nice light brown. Remove from oven and immediately spoon granola back into mixing bowl. (Note: do not let granola start to cool on baking sheet or it will be difficult to remove). Mix-in 1 Cup (or slightly more) of dried fruit of your choice (craisins work really nicely). As granola cools, periodically chop it up and stir to make nice 'crumbles'.
Ideas: Great when mixed in with yogurt and fresh berries; also great as a topping for ice cream.
To create more of a trail mix snack, add your favorite "mix-in's" to granola (i.e. M&M's, almonds, peanuts, raisins, etc.)

Ingredients
1 ¾ cup sliced almonds
¾ cup Splenda sweetener
2 egg whites
1 1/8 tsp salt
1 tsp vanilla extract
Directions
1. In bowl of a food processor, combine 1 ½ cups of the almonds and ¼ cup of Splenda®. Process until mixture is finely blended and set aside.
2. In a large glass bowl, place the egg whites and salt. Beat with an electric mixer until soft peal forms.
3. While mixing slowly; add in remaining Splenda®, 1 tbsp at a time, continuing until mixture is thick and glossy. Beat in vanilla extract and fold in the mixture from the food processor.
4. Line two cookie sheets with aluminum foil (Do not spray with cooking spray). Drop rounded spoonfuls of mixture onto a cookie sheet.
5. Bake at 350 degrees for 10 – 18 minutes or until cookies are light, golden brown.
6. Turn off oven and let sit with door open for 30 minutes. Remove from the oven and allow cookies to cool on pan at room temperature. Peel cookies from foil and serve immediately or store in airtight c
