Heat vegetable broth to a boil add brown rice stir and reduced heat cover to a simmer and cook for 20 minutes or until liquid is absorb. Cut chicken into cubes, season chicken cubes with Mrs. Dash, onion powder, garlic powder, black pepper. Heat extra virgin olive oil and butter in a skillet. Cook chicken for 7 min then add vegetables, cook 10 more minutes. Ensure there is no pink left in chicken, remove from heat after vegetables are tender. Remove from heat let cool for 5 minutes, serve over 1/2 cup of brown rice.

Pull the skin off the chicken thighs, rinse, pat dry. Lightly flour each piece of chicken shaking off the excess flour. Place in a casserole dish or rectangler pan lined with foil. Rub each piece of chicken with the sage. Bake at 375 degrees uncovered for 45 minutes. Peel and cut up the potaoes into wedges and place on top of chicken. Pour the cream of chicken soup (do not add water) over potatoes and chicken. Cover and continue to bake at 375 degrees for another 45-60 minutes or until potatoes are tender. Good recipe, the chicken is tender and falls right off the bone. You get your meat, potatoes, and gravy in one dish. Just serve with a vegetable. Very tasty dish.

This is my ultimate time saving "go-to" recipe for quick dinners the whole family loves. I grill several pounds of chicken breast over the weekends and store it for quick use through the week for fast dinners. I always have either Great Northern beans and/or the White Kidney Beans-labeled as Cannellini Beans by Bush's Best, but you can really use which ever you have- I prefer the northern simply because they are smaller, but really no difference in taste. I normally use chicken broth; but was out so I grabbed the beef that was in the pantry and turned out just as well. Can make with or without the cream of celery- but adding it helps thicken it up some. Can add as much water as you want to cook off- really the liquid is up to your own preference. When I originally saw this recipe- it was with just one tablespoon of chili powder; but I like more flavor than that so I make it with two. I actually got this recipe out of a parents magazine awhile ago.
